First Initial on seating

How do I get the first initial of the last name on the seating chart and when taking out players?

Currently not an option, but on the to-do list.  Right now you'll have to go with one of the options on the Preferences tab (Name Format button).

Not sure what you mean by "when taking out players".

I use first name and last initial for each persons "nickname" in my database.  Then, for player stats and seating chart I use Nickname and I get first name last initial for these items.
