2 tables run as seperate tournaments?

is it possble to run two tables, as seperate tournaments without merging the players and still use the TD to keep the stats?

Well, you can set up TD so it won't move players around for you.  You could then manually award the prizes once the tournament is over (points and money, etc).  However, the rankings would still be combined if you care about the rankings.  If you only care about "stats" as far as money and/or points, the rankings wouldn't matter.

As far as I know, you cannot split tables into two separate tournaments within the program; you'll just have to work around it in some way.

If you're attempting to run two truly separate tournaments, you'll need to run two instances of the TD, and you'll need 2 PCs to do that.  There's no way to really merge two different databases, so you'd need to make sure all players are in one of the databases, and then copy the database to the other PC (just copy the "db" folder from one install of the TD to the other).  When the tournaments are over, copy the saved tournament from the 2nd PC back to the first and you should be able to collect stats just fine.
