On Tables Tab, right click on a table header (table name) and have option "Break This Table

... meaning send these players to empty seats at other occupied tables (no player would ever be sent to a table that had no players seated at it)? And show an alert if there are not enough empty seats at other occupied tables?

It would have the same effect as using the collapse order and selecting a table to break next.
Right-click, "Collapse This Table" and TD3 would beak that table and open the Player Movement Dialog.
