Anyone have any ideas how to display a picture of a pokertable with the names

Read section 28.2 in Help. That should guide you through the process.

You can also just use the included Layout template "DefaultWithTableImages.tlo".

Does anyone have a script that will dynamically distribute the players around an image so that no matter how many players you have per table it will display correctly? Just trying to get around having to load a new image each time the amount of player per table changes.

Do you change the number of seats at your tables during your tournament?

No...my tournaments generally start with 8 people but then a few will show up and all of a sudden I have 10 at a table. At that point it would be nice if the html file could dynamically restack the player positions for a 10 person table. I know it's silly but it just something that would be kinda neat.

But you still want to use an image with eight seats and then change to an image with 10 seats, right?  If that's the case, then you'll have to do it manually.
