You'll have to do it manually. Create a prize on the Prizes tab with a Recipient of "Manual". Set the Amount to "Fixed amount" and enter the prize amount. When a player gets pocket aces, edit the prize and in the Override section, select "Award to player" and select the appropriate recipient.
Stats won't track this type of prize.
